What would be the best healthy flour to use in this cookie recipe?
I'm making a healthy oatmeal cookie. What would be the best flour to use in this recipe to get the most health benefits. Bob's Red Mill makes a million kinds of flour kamut, 10 grain, whole wheat, coconut, buckwheat, etc. but not sure which would be best in this recipe. The recipe calls for 1 2 cup of flour in addition to the following 1 cup rolled oats1 2 cup shredded coconut1 2 cup wheat germ1 8 cup canola oil1 8 unsweetened applesauce4 tbsp honey1 tsp baking soda1 whole egg1 egg white Combine oats, coconut, wheat germ and flour. Heat the honey, oil, and applesauce in a small saucepan until the mix just comes to a boil. Remove from heat and mix in baking soda. Pour this into the oat mixture. Fold together along with the eggs. Roll into small balls and place on line baking tray. Back 15 min at 350.WHAT flour should I use?ANY other recommendations to improve this recipe?

2 1 8 cups bleached all purpose flour about 10 1 2 ounces 1 2 teaspoon table salt1 2 teaspoon baking soda12 tablespoons unsalted butter 1 1 2 sticks , melted and cooled slightly1 cup brown sugar light or dark , 7 ounces1 2 cup granulated sugar 3 1 2 ounces 1 large egg1 large egg yolk2 teaspoons vanilla extract1 2 cups chocolate chips or chunks semi or bittersweet I got it from this Yahoo article a week or so ago. Here are some of my ideas Whole wheat flour instead of bleached all purpose flour Dextrose corn sugar instead of regular granulated " table" sugarWould those two subs be good? I'm not sure if the whole wheat flour would taste good or if I can directly substitute it.Also, any ideas for the butter and chocolate chips? I don't know what I could substitute in for butter without ruining the consistency I could probably use a healthy oil, such as sesame seed or canola, but I have no idea how much , and for chocolate chips, which type is most healthy?Some of this stuff is so bad for you though, even in moderation. Bleached white flour...that just sounds so wrong to me after striving to eat only whole grain, unprocessed foods for so long.I realize butter is better than some margarines shortenings but surely not the ones that contain zero trans fat. The imitation stick margarine is horrible, but there are many new margarines that have come out since the dangers of trans fat have surfaced, such as canola oil based margarines that contain healthy unsaturated fats zero trans and very little saturated fat.
